Dirty Dr. Pepper Floats

Things are starting to heat up here, and we have been thinking about ice cold drinks, backyard BBQ's and pool parties.  If you are from Utah then you are familiar with Swig and the infamous dirty Dr. Pepper and Dirty Diet Cokes. The drinks consist of either Diet Coke or Dr. Pepper, coconut syrup, lime juice and a splash of half and half….sounds delicious RIGHT.

Well we decided to take it to the next level and create our own twist on the drink by making a Dirty Dr. Pepper float.  All you need is Dr. Pepper, lime, and some coconut ice cream. Pour a glass about half way full with Dr. Pepper, squeeze in some lime juice (about 1/4 of a lime) drop in your coconut ice cream and watch it fizzle.  WARNING: do not fill the entire glass with Dr. Pepper because when the ice cream is added it will create foam that rises to the top. We made a man made volcano with our first attempt and the foam would not stop overflowing. 

This is the most refreshing twist on a soda float. It was definitely popular around our house! 
We used some homemade coconut ice cream, but to make it a little easier store bought works well too.  We garnished with a lime and some toasted coconut.
